Dinner Dishes-2

Curd or pergugu Bhendi Recipe


What are Ingredients:
250 gms tender lady’s fingers (Mom used baby okra, wash and pat dry with a kitchen towel, trim the top and ends)
½ inch ginger piece/1 tbsp oil
1 dry red chilli /1 tsp cumin seeds/2 green chillis slit lengthwise
1 tsp coriander pwd/pinch of turmeric powder
1 tbsp besan (gram flour)
1 cup curds /salt to taste


How to make it?


Peel the ginger and pepper make a paste of ginger. Keep aside. Whisk the curds and keep aside. Heat oil in a cooking vessel and add the dry red chilli and cumin seeds and stir fry till the aromas come out.
Add the green chillis, coriander powder, turmeric powder, besan and stir well for a few seconds. Don’t overcook or burn it.
Add the trimmed and cut lady’s fingers (which have been stir fried in a tbsp of oil for 2-4 minutes) and salt and cook over medium heat stirring frequently for 4-5 minutes. Stir in the ginger-pepper paste.
Reduce flame and add the whisked curds and mix well and cook covered for 12-15 minutes stirring occasionally or till the okra is cooked and you get the desired curry consistency.


Directions of Laya’s Chicken

Ingredients
1500grams chicken and 1/2cup dry red wine
3 egg yolks, lightly beaten to fry Oil
1/2cup tomato sauce and 1tsp Worcestershire sauce

How to make?

Cut chicken into serving seized pieces; remove skin, cut chicken from bones. Chop chicken, combine with egg yolks& mix well. Deep-fry chicken in batches in hot oil until lightly browned and just cooked through, remove from work; drain on absorbent paper.
Drain oil from work. Add combined wine, and sauces to work, stir over heat until sauce boils.
Stir in chicken pieces, simmer until heated through



Directions of Chilli Chicken
Ingred’s
1000 grams chicken
4-5 Elaichi
1 tbsp garam masala
2 tbsp garlic paste
2 tbsp ginger paste
200 grams green chilli
200 ml mastered oil
300 grams onions
3 tbsp red chilli powder
2 tbsp turmeric powder
How to make?

First Clean the chicken and cut it into 10-12 small pieces. Add Mustered oil(100 ml),red chilli powder, turmeric powder to the chicken pieces and mix it well upto 5-10 mins.Heat 100 ml oil in a large thick bottomed non stick pan.Add the onion, and fry the onions till they are golden brown.
Then add the garlic paste & garlic paste & fry for another 3 minutes.
At this point we can add half cup water so as to make the onions pulpier. Now add the chicken pieces. Fry it for approximately 15-20 minutes until chicken boiled 70%.Add a large cup of water. Stir once in a while.After approximately 10 minutes add Green Chilli & Garam Masala.
Now boil it for another 10 mins & turn off the heat.
Now add the elaichi & stir it once and transfer the chicken into a serving


Directions of Tandoori fish
Ingredients
1 big Shan tandoori masala- You can use any Fish tandoor masala
8-12 piece tilapia fish
2 to 3 tbs tbsp_vinegar and 1/2 cup cup yogurt
How to make it?
Mix all the above ingredients and marinade for about 2 hours. Line the baking tray with the foil and arrange the fish on it drizzle some oil. Switch on the oven to broil mode and bake for 3 to 5 min each side.
