We will start with some Indian cooking

BreakFast and Snack

Vegetable-Pie:
Ingredients needed:

2 cups plain flour(maida)
Where to get Maida?
Indian grocery stores - If you are residing outside INDIA
100 gms. chilled butter
1/2 tsp salt
chilled water

2 cups chopped veetables of your choice( Ex: peas,beans carrot,cauliflower..)
2 Onions( preferably red)
1 tomato
1/2 piece ginger
1 tbsp oil
1/2 tsp
1. Red chilli Powder
2. Curry masala( Garam masala)
1 tbsp. cream
1 tsp. corn flour
salt to taste

How to??

1.Mix Flour and salt.
2.Add chilled butter. Mix with fork or spoon, till mixture is crumb. sprinkle chilled water over it.
3.Mix the doug into ball or Lump.
4.Chill dough for 15 min in a plastic Bag.
5. roll dough in to 3 or 4 inch round.
6. place it over greased pie plate.
7. Prick with knife or fork all over.
8. Bake in pre heated oven for 12-14 min or TILL Light brown.

The above makes shell which we will use later

9. Now grate Tomato,onion, ginger and chop green chillies
10. chop and boil all other veggies.
11.cook 4 - 5min and stirr occasionally.
12. Add all other ingredients except cream.
13. cook till water evaporates and curry looks very thick.
14. sprinle corn flour over the crust
15. pour the spread and start filling shell
16. pour cream all over and bake for 7-10 minutes in pre heated oven.

17. Slice and serve warm.

Ingredients:




Idli


Ingredients:


2 cups Rice
1 cup Urad Daal (white)
1 1/2 tblsp Salt
A pinch of Baking Soda
Oil for greasing

To make idli

Pick, wash and soak the daal overnight or for 8 hours. Pick, wash and drain the rice. Grind it coarsely in a blender. Preference is to grind in Grinder.( National/Rama/Sumeet)
5.Grind the daal into a smooth and forthy paste.
6.Now mix the grinded rice and daal together into a batter.
7.Mix salt and set aside in a warm place for 8-9 hours or overnight for fermenting.
8.Idlis are ready to be cooked when the batter is well fermented.
9.Grease the idle holder or pan well and fill each of thm with 3/4th full of batter.
10.Steam cook idlis on medium flame for about 10 minutes or until done.
11.Use a butter knife or spoon to remove the idlis.


Ingredients for Sambhar


15. 2 Cup Tuvar Dal
1/2 tsp Haldi (Turmeric)
3 Red Chilles
1 tsp Sambhar powder
1 pinch Hing ( Inguva)
2 tsp Mustard
1/4 tsp Tamarind paste
2 tblsp Vgetables washed & chopped ( Drumstick, Green Pepper, Brinjal or Eggplant, Bindi or Okra)
16.If you do not like Brijal or Okra you can drop them
Green Chilles to taste
17. Few Curry Leaves
18. Salt to taste
19. Cooking Oil

To make sambhar :

20.Cook tuvar daal or toor dal with haldi and water and keep aside and Cook the vegetables in water enough to soften them and add haldi and salt.
21.When vegetables are cooked add tamarind paste
22.Heat some oil in a pan, splutter mustard, add red chillies, green chillies, curry leaves, hing, and sambhar powder and keep stiring for few minutes.
23.Add this to the boiling vegetables.
24.Add toor daal and let it cook for a few more minutes.

Mango Lassi


Lassi is the perfect cooler on a hot day. You can add extra sweetness to it (if you like) with honey. If you're making it for kids and want to avoid the sugar, use Honey. This recipe makes 4-5 glasses of lassi.

Cook Time: 5 minutes

What are Ingredients:
3- 4 glasses of yogurt (use a glass you will serve the lassi in, to measure)
1 glass of crushed ice (measure as above)
1 glass ripe mango pieces or Mango Pulp
Note: If you need extra sweet- Add Sugar
1 tsp almonds for each glass
A scoop of thick cream for each glass (optional)


How to Prepare:

Put the yogurt, mango, ice and sugar/Honey/pulp in a blender and blend till smooth.

Pour out into glasses, top with a scoop of cream each and almonds and serve.

Chicken Roll

What we need?


1 cup cooked chicken( Breast piece)- I prefer to Cook in Cooker for 10-12 minutes or 3 whistles.
1 onion chopped & 1 small tomato chopped
1 tsp of ginger-garlic paste
1 tsp garam masala
2 eggs
a few chapatis
salt to taste
chilli powder to taste


Now for how to make ?

1.In a pan heat oil and fry the onions. Then add the ginger garlic paste and fry for 3-4 minutes adding a few drops of water. Then add the tomatoes and the chicken.
2.Fry well, add the garam masala, salt and chilli powder. Fry this till done.
3.Now in a bowl beat the eggs, season with salt. ( like you prepare for omlette)
4.Heat 1 tsp of oil add 2 tbsp of the egg and cover it with a chapatti . When the egg gets cooked flip the Chapathi and fill it with a little of the chicken mix.
5.On top of the chicken you can add a few chopped onions, cilantro and a dash of lime.
6.Roll it up and serve hot with hot sause or Maggi ketchup.
